10 Minute Chicken Tacos



Time got away from me one afternoon this week and I found myself staring at the refrigerator with no meal plan in mind. I almost always have tortillas on hand since I buy them in the big tall package and they keep practically forever refrigerated. Something else I've been stocking lately are these precooked, frozen, Mesquite Grilled Chicken Breasts from Sam's Club. I often heat the chicken breasts the toaster oven for 10 minutes and throw them on top of a salad or sometimes make quick chicken enchiladas. This time, while the chicken heated, I cut an avocado, onion, tomatoes and cilantro and heated the tortillas. And done! Dinner in 10 minutes (15 if you count the time I spent standing in front of the refrigerator and looking for the pan for the toaster oven).
10 Minute Chicken Tacos
6 Corn Tortillas
1 Avocado
2 Tbs Onion
5 Cherry Tomatoes
2 Mesquite Grilled Chicken Breasts
Lettuce
Salt
