Crispy Fingerling Potatoes



These fingerling potatoes get snatched up quick at my house. 
Unlike many potato dishes, they are great room temperature.  This recipe is great with lard or bacon grease instead of olive oil.


 
Ingredients
20 Fingerling Potatoes
4T Olive Oil
Salt
Pepper
Parsley


Directions
Boil fingerling potatoes until just tender, 15-20 minutes. Drain, cool and let dry. On medium high, heat olive oil in a large skillet. Meanwhile, cut the potatoes in half and carefully set them half side down in the pan. Cook 10 minutes or so without turning, until browned. Drain oil, sprinkle with salt, pepper and parsley and serve.
